Sault sits on a 125-acre estate at Sailors Falls outside Daylesford — eight acres of lavender running down to a lake, with a hand-crafted barn chapel standing at the end of the rows.
Two ceremony settings share the same view. The air-conditioned Wedding Barn/Chapel looks out over the lake and comes with ninety wooden folding chairs, a registry table, power, a sound system for a phone or iPad and the estate’s event planner; the garden site alongside the lavender field north of the restaurant sets eighty outdoor chairs, a linen-dressed registry table and power under the trees for a band or celebrant. Guests then take canapés and drinks on the deck, 180 degrees of estate falling away in front of them, before the restaurant seats up to ninety for dinner. Packages run two- and three-course, each with white damask linen, personalised menus, harvest-style tables, table numbers, an easel for the guest list, staffing, a microphone for speeches and a dance area; receptions run five hours and must finish by 11pm. The lavender blooms November to March.
